Like all of Latin America, Peru was also a land where the chocolate-based drink spread under the pre-Columbian Mayan and Aztec empires.  The climactic conditions are perfect for the growth and development of cocoa trees. Among the three existing varieties of cocoa beans, Peru produces criollo, native to the nearby country of Venezuela. It's the most sought after variety by chocolate-producers due its features and especially its rarity. In effect, the harvest of criollo represents only 5% of the world production. Peru is a fairly new producer that is particularly committed to organic cocoa. The culture of the latter is attempting to replace coca cultivation, which is very present. Fair trade is also widespread in Peru.

It should be mentioned that organic and fair-trade brands attract more and more consumers, especially in the European market.
