Guyana and chocolate: a long history!
Before the discovery of the New World, chocolate and its main ingredient, cacao, were unknown by European colonists. As such, recipes for chocolate drinks were only brought back to various royal courts beginning in the 16th century. Certain explorers and entrepreneurs took a chance on cacao production and developed several plantations. Jews who emigrated from Holland to Guyana proved particularly successful in this area. The estuaries of the Essequibo, Demerara and Berbice rivers were the transit points for these products. Each of these territories were part of Dutch colonies, which combined, would constitute the majority of Guyana at the time of the British takeover following the Treaty of London in 1814. Furthermore, the colony of Berbice bestowed its name on the local variety of cacao: Berbiche cacao. This type is less tasty than the one from Criollo and certainly less resistant than the Forestero variety.
